Zomato and Swiggy are good at finding you customers. They are expensive at keeping them.
Commission comes off the top of each order, every day, forever. On a ₹600 bill that is real money leaving a business already working on thin margins. The same order placed on your own site costs you a payment gateway fee of roughly two percent. Run that difference across a month of repeat customers and it usually pays for the website several times over.
Someone orders from you forty times and you still do not have their number. The relationship belongs to the app. You cannot message them about a new menu, a festival offer or a slow Tuesday, because you never got their details. Orders through your own site give you a customer list that stays yours.
Visibility inside the app is bought with discounts. Stop discounting and you drop down the listing, so you discount again. Your own website has no ranking to buy, which means the price on your menu is the price you charge.
None of this means leaving the aggregators. Most restaurants we work with keep them for discovery and move repeat customers onto the website, because a returning customer already knows what they want to order.

The menu is the page people came for, so it gets built properly instead of uploaded as a PDF nobody can read on a phone. Dishes grouped the way your kitchen thinks, prices your manager can change in two minutes, and a QR code for the tables.

Plenty of restaurants have a website. Far fewer have one that brings in an order.
A PDF menu is a scanned image as far as Google is concerned. None of your dish names are searchable, and the customer has to pinch and zoom on a phone to read the prices. Built as real pages, the menu becomes the most visited part of your site and starts picking up searches for the dishes you are known for.
For restaurants, the map pack sits above everything and takes most of the clicks. Your Google Business Profile needs the same name, address, phone and hours as your site, good photos, a menu link, and a steady trickle of reviews. We set that up and give your staff a one-tap review link to hand out with the bill.
Schema.org has types built for this: Restaurant, Menu, MenuSection and MenuItem, plus opening hours and price range. Filled in properly, Google can show your cuisine, hours and price band directly in search, and AI assistants have something structured to read when someone asks for north Indian food near Golf Course Road.
Food photography does more for a restaurant site than any copy we could write. It is also what makes these sites slow, because a gallery straight off a photographer's drive can run several megabytes per image. Every shot gets converted, resized for its slot and given width and height so the layout holds still while it loads.
Someone drives over on a Monday because your listing said open. They find a shutter, and they leave a one-star review about it. Hours live in one place and publish to both the site and your Google listing, with holiday timings set in advance rather than on the day.
A listing inside an app ranks inside that app. It does not rank on Google, it does not carry your brand, and it does not give you the customer's number. Keep the aggregators for finding new people. Use your own site to keep them, with a first-order discount on direct orders and a WhatsApp list that belongs to you.
